All the warnings you've read about using gift cards are not made up by somebody who hates the banks that back them, it's the transaction that's suspect. It a simple rule: "do not do business with providers who ask for gift cards." Period. This is as ubiquitous as the Surgeon General warnings on cigarette packs.
   
A provider who not only won't accept cash, but wants a gift card -- a specific gift card at that -- my be from some parallel reverse universe. Who knows what kind of diseases they have there, but we probably don't want them on our planet...Stay Away!

I always pay in cash, no complaints. The only gift cards I give escorts are actual gifts.

That is a first for me. I give GCs for a deposit on occasion but the final balance has always been asked for, and given, in cash.

You just have to do your research and you should be just fine. I have done so numerous times with zero issues.

Unless the provider wants you to bring their fee on a GC, instead of cash, when you meet in person, I'd say find another provider. Could possibly be a scam otherwise.

As most others have mentioned, if she is asking for payment (in any form) in advance of a meeting, I'd be very suspicious. Having said that, do you want anonymity? You will have to buy an eBay gift card using cash at a brick and mortar store (Walmart, CVS, ...). Do they sell eBay gift cards at those places? If only on-line, there is zero anonymity.

If she asks you to send her the code numbers from the card or a photo of the numbers on the back of the card that is a warning sign.

In reading all of the answers that appeared before mine, I thought someone might bring up the possibility that the escort has concerns over COVID, and it might have something to do with turning down cash and preferring other options. While I don't know if that's what's going on in this particular escort's mind in telling you she doesn't want cash, I still side with those who smell a rat.  Legal tender pays for practically everything that you need to do in the hobby, and personally, it's my default/go-to method of payment.
Also, the fact that she specified exactly which type of gift card she wants you to fork over adds to the suspicion. If someone is trying to scam you, it seems to be the perfect recipe for it. Of course, she might be 100% legitimate, who knows? It's neither my money nor my situation: I never even consider paying for hobby-related transactions ahead of time or in any way that's not face-to-face. You might be in a TOFTT* situation if you go through with it.

1.The scammers are rapid with fosta and the sight take down laws. What few easily sights left are 100% free add funded, there for being bombarded and bamboozled with over see scammers.  
2. Have to really search the adds boards or get on a pay sight. It more work in 2021 but there some nice lady out there that will make worth it.  
3. I have yet to read a review of lady that takes green dot or any other form credit card. There nothing wrong with a gift to nice provide.  
4.her body guard, landlord, ride, want cash.

I did a short search and I can't find one provider who only accepts gift cards.
