There are no strict definitions for either. Sure, there are extremes on either end of the scale that most would agree fit what most of us think of as the meaning of those terms - for example I think almost everyone would agree that seeing 12 clients a day is high volume and seeing one or two a day is low volume. Other than that it's pretty much a matter of opinion.

What is the true definition of both? Honestly, I may see 1-2 new clients a month. I consider myself extremely low volume. I started as a high volume provider seeing 3 clients or more a day. I had a private incall & no kids way back then it makes a huge difference lifestyles.

You say you "see 1-2 new clients a month." But depending on how many prior clients you see a month you could be either low or high volume.
I agree that if you only see 1 or 2 PRIOR clients a month plus 1 or 2 NEW clients that would certainly make you low volume.

I wouldn't say there is a true definition. Some think 1-2 a day is low volume. And compared to some agency ladies, like kgirls, it certainly would seem that way. And, IMO, the number of new clients is not relevent. It's the total number of clients you see, new or not.

 
That said, for me, low volume would be a number of clients that are more in line with a sexually active relationship. Now, I know their are outliers, but most people have jobs and are not fucking all day. In fact, they are more likely to have sex once a day, occasionally twice. There may be some days/nights where they're busy or tired or just don't find the time for a reason. So, having 1-2 days off every week. I would say about 5 clients a week, give or take, is what I would consider low volume.

 
This doesn't mean 6 is high volume. Nor does it even mean 10 is. I do believe between low volume and high volume, there is a more average volume as well.

Personally I could care less about one or the other. That being said if shelling out top dollar want to feel like the experience was worth it from scheduling, to entry in the door , as well as the session which would mean the lady spent the the time to be all she could be to be ready and perform  for whatever the length of time.
I do honestly feel that since about the TER shutdown/ Covid break that it seems like lot of the top tier professionalism as slipped more then a little.

I don't think there is any set number, the distinction mostly comes down to describe a business model. If a provider is offering QV, HH and FH dates its is pretty clear they are trying to get as many clients through the door as possible and they are probably seeing multiple clients per day. This is especially true for providers working in massage parlors, in brothels, or for agencies. These are high volume providers. If a provider has a 90 minute or two hour minimum and incentivizes longer bookings I would call them a low volume provider. They are focusing on less frequent, high margin customers. It depends on if the client is trying to see as many people as possible or land a few whales. However, there is no guarantee a "low volume" provider is actually low volume. There are some higher end providers that get a lot of reviews, which suggests they are actually seeing a lot of clients. I'm sure if a "low-volume" provider had the opportunity to see two or three clients in one day they would take it. Also if a provider is on tour all bets are off, I'm sure they are seeing as many clients as possible in the short window they are in town. I view it as a marketing term and don't put too much trust in the term. There are plenty of providers doing this as a side hustle and only have a limited amount of time to see clients. There are also providers that do this full time and want to maximize profits. I don't put too much stock in the term but I do prefer "low-volume" providers that prioritize longer dates. I have seen high-volume escorts but those are usually quick and cheap appointments.

waiting in my car for the customer before me to leave, it doesn't matter much to me.  This is a scheduling issue and not a volume issue.  It can happen with a provider who only has two appointments that day, or one that has five.   With that said, my own opinion is that any provider seeing an average of one customer a day or less is low volume to me.  A good night's sleep between customers fixes most issues that might come up.  I consider an average of more than two customers a day to be high volume.  

 
You, QB, are DEFINITELY low volume in anyone's book.

i can’t see how you can provide a good experience if you are seeing 6-7 per day like some of these “backpage” gals….

i am thinking about how i could do it from a guy’s POV and my dick gets exhausted even considering it

Low volume providers are the ones who’ll typically see up to two clients a day.

Some people say there’s no difference between a gal that sees 4+ clients a day and sits in an incall spot waiting for clients to show up— and the independent (low volume) provider who schedules sessions on a per request basis.

The former has a tougher job (but in many cases can earn more $ with a higher volume of clientele), while the latter has the benefit of an easier schedule that also allows themselves to put more energy and effort into a session.
