Many of the women whom you say "gush" are likely squirters who have not learned to push the fluid from their body. G-spot stimulation causes the build-up (though it does not HAVE to be direct) and a pushing of the vaginal walls creates the "squirt" effect. Quantity of fluid varies depending on the lady, her hydration level, etc.
This is not an urban ledgend... just something that women don't know enough about or learn to do. Also, many men (ahem...) assume it to not be true, and so don't learn either.
