My very simple guess would be that it is one place that can't be seen from the hallway if someone else were to walk by. That could be convenient, considering what they are wearing or not wearing. With many hotel doors, the only way to have the door unlocked is to prop it open, which they probably wouldn't want to do. So they were likely right by the door anyway to open it, not inviting you in from across the room.
Not to mention, once you step in, she can immediately close the door and plant a big kiss on you. I have no complaints with the scenario.

The reason the lady is "behind the door" is because she's not wearing street clothes. I've had this happen in hotels & apartment buildings but also doors that open to the street. It's just not discrete to flash passers by.
To me it is always a thrill, walking into the room, waiting for the door to close to the world and essentially open to me, revealing the lady waiting "behind" the door...
I wouldn't think the other side of the door works very well. Depending on angles, you still have a greater danger of "flashing" someone than you would standing behind the door. Considering what I have to look forward too, I'm willing to wait that couple extra seconds.
