she showered & got herself together while I waited in the lobby. We had a great dinner (til restaurant closed) & got to know each other outside our hobby roles.  Sure we flirted, held hands, & made out a lot (car, elevator, parking lot).  But no $ was requested nor exchanged.

Don't underestimate the power of having a beautiful woman on your arm.  It can be even more enticing than the sex.

Providers, like hobbyists, can't really talk about certain things with their civie friends or families.
Usually it is "chat" before or after a session - but sometimes can be OTC like you mention.
Maybe you are a very good listener and she just wants someone to talk to as a "friend". I would just take her up on her offer - maybe even ask if you could treat her to dinner. Don't over think it - just treat her like any friend.

You should be flattered

You probably have never been asked out on dates before so it may seem awkward. Look she is most likely from out of town, knows nobody there aside from her clients and is bored to death of sitting in that hotel room hour after hour and day after day. Unless you are married and have a wife that wants an explanation for your whereabouts all the time, I suggest you be a gentlemen and go have some champagne with her.

If so im guessing its screening or to see if shes comfortabke or if the two of you will have any chemistry.
If it is a orovider that you've established a rapport with maybe she just likes your company and want to spend time with you off the clock.
