Has anyone gone to HongKong. I understand that the most popular way to hobby is to go the buildings and knock on each door but that looks a bit uncomfortable. I did visit the websites sex141 etc. which looks good but have heard that a lot of the photos have been photoshopped. I like the fishbowl experience where you can see multiple girls and choose the one you like. Wondering if there are establishments like that in HongKong?

Went last year. FS starts at 500 Hong Kong Dollar, which is ~$65 US Dollar. 1:1 prostitution is legal, so supply of women isn't an issue.
Hong Kong is also a financial hub, so providers from surrounding countries will fly in to work. Russians went for 1000 Hong Kong Dollar last year, which is ~$134 US Dollar.

For some reason I am unable to even access the ISG site. Probably because I am using a VPN. Does anyone know what website would be a good one to find providers within a particular price range? I am often confused if they are talking about HDK or USB. I would prefer to book one via a website and then go to her place. Also will they be able to converse in English?
Then don't use VPN... You need to find the way to get on the website and do your own research. There were some websites shared on the Hong Kong form that I just perused (for you.. not for myself...helping you out here...) but the sites were in Chinese, which I don't speak or read.
No one can do the work for you. Best we can do is direct you to the right place.
Also, seems that knocking on the doors is the popular method to get laid over there.

I know you don’t like the idea of knocking on doors, but trust me, it is quite the experience. It sounds awkward to knock on the door, do an elevator check of the girl and decide yay or nay, but after the first few encounters, it becomes fun in a way. It’s almost like a box of chocolates, not knowing what you’re gonna get.
I went to King Hing and the building has several floors of providers, mostly Chinese, Thai, Viet, and Russians. I loved my time there and the going rate was dirt cheap compared to the US.
I wanted to try the website route, but ran into alot of fake postings so I opted to go to King Hing building instead. Good luck!
