Call me cynical but I suspect she is calling you because she needs cash fast, and not because she feels an overwhelming desire to correct the previous disappointing experience (as per your statement).
Since the last time was so thoroughly disappointing, I would suggest she put forth some gesture of good faith. Either a discounted price or multi-hour for the original price.
I am not sure why the customer should have to take the risk here. She did not deliver last time. The onus is on her to justify why this time around things will be different. Hence she needs to put forth a proposal that clearly demonstrates that she intends to rectify what occurred previously.
If she is unwilling to demonstrate a desire to deliver above and beyond this time around, I would take a pass and simply deliver the message without being rude or a jerk about it.
