During my search, I've seen plenty of threads about what NOT to discuss over phone or email. So I'm curious what are some things that should be discussed after the meeting has been set but prior to actually meeting? I've done my research so I know what the rate is even if her site doesn't state it.

If you've done your research, then you know pretty much what to expect.  Just by reading your previous posts, you've had a hard time getting this appt.  Don't queer the deal with some last minute requests. Before a first appt, she'll be pretty guarded until the session.  Just know that with every provider, Your Mileage May Vary (YMMV) & that's an iron-clad rule of the sex trade.

Make sure you're at your best when you meet her. Shower right before the appt and dress well.  Read whatever info is available about her from her P411 profile & web site so that you can make small talk & put her at ease.  A gorgeous provider once quizzed me during our first appt about the info on her P411 profile.  I started riffing on her questions like we were on Jeopardy (Favorite Flower for $200) & got her laughing.   A sense of humor helps, and be a gentleman at all times. Good luck.  --z

If you have VIP membership, than reading the juicy details should answer almost all your questions.
This isn't about email penpals. I keep my emails short. I tell them a little about me, give them references, and request a specific day, time, length of appointment, and whether I want incall or outcall. If you haven't read the "self help center"  I recommend you take alook at it. Also scroll back a few pages on this board, almost all newb questions have been asked before, expect the one you asked the other day about where to put the envelop, was one I don't ever recall seeing. .

about small talk just to get a feel for you.

I think they think it helps weed out psychos and the like.  They could well be right.

In any case, discuss any old subject that they want to go to like what movies you like, or your other hobbies, etc.

Just steer clear of any references to sex for money and you should be fine.

such as attire and any role play requests, but nothing explicit. I don't even like getting explicit emails from guys I have already seen, much less someone who is brand new so keep it PG.
