I think from the tone of the OP you may be a Provider of some type. FBSM? Providers use many techniques for screening... both for LE and their safety. It would be foolish to discuss much of screening on a public forum. There is likely some basic information on this board if you use the search feature, also the legal board will have some.

Everyone thinks LE can & can't use certain words, or can and can't make certain gestures in order to arrest a provider of client.
Simply put if your ass ends up in a hotel room, and you're not the hotel housekeeper making it's rounds....you're busted,
all kinds of things. They can LIE for heaven's sake! How do you think they manage to get undercover in order to pull stings?

LE need to gather evidence to build their case. So they will try to elicit incriminating statements. A great way to do that is to specifically and explicitly ask for extras.
Undercover: "How much more for anal sex?"
Naive Provider: "$100."
Boom. Busted.
One thing LE *can't* do is stick his dick in her. That would be a Constitutional violation (in the US). So LE can lie and lie and lie all day, but they can never seal the deal. Thus, their entire case must be built on statements and actions that clearly demonstrate, when taken as a whole, that she was offering sex for money. Note also, that you don't hear much talk about flipped Johns on here, but theoretically, a flipped John (i.e., a civie who is cooperating with LE) can do all the same things as LE, but has the same limitations, too.
The only REAL anti-LE test?... The moment he sticks his dick in. I'm no provider, but I imagine many providers breathe a sigh of relief when they get past that moment with a new client.
There have been dozens, if not hundreds or even more cases where an undercover cop has "stuck his dick in her".
Please guys if you are going to offer legal advice, make sure you have your facts straight.

Wrong... been to IN lately?? In their "vice handbook/protocol" they can do whatever they "deem necessary" to get the arrest... including oral sex or full service(they're just not supposed to cum).... and I'm sure many other areas have laws just like these. Some places LE is just plain dirty, & will go through with the entire appointment before arresting the provider & then lying on their report... the providers word against LE.

LE can and will break the law in their zeal to make an arrest, that was my point and thank you for supplying the proof.
Rotten LE is more likely to extort a lady than to arrest her...
When undercover gets the assignment, the supervising officer will not instruct them to do this in the assignment briefing (formal organization). However, if you have any idea how LE actually works, the officers will discuss with partners how far to go, and will even unofficial have conversations with deputy DAs or CAs, who will be processing the charges, what the backlash might be if an officer "inadvertantly goes a bit too far." They will even discuss what IA or the particular judges might do when that info comes to light.
If the political figure (elected official) at the top of this dung heap wants the busts bad enough, the cops will do dirty shit to get you.
That's what's real.
