Regarding when to give her the gift, I would give her the gift when there is a break in the action, such as between cups, if you have a multiple hour date. I then just get the gift I have brought her and say here is a little something for you. It's never been awkward for me.
Well I'm not necessarily a newbie but this is the first time I've contemplated getting a gift for a provider so this is a new area for me. I'm not as worried about what to get as I am curious as to the best way to give it to her. (This is my first time with the provider too.)
It just seems a little awkward to walk in holding it and saying something like "this is for you" and handing it to her, but I don't really see any other way to do it. I'd also feel self-conscious walking across an apartment's parking lot holding something obvious like a box of candy, but again I don't see a better way to do that.
you were not seen obviously walking to her door with a gift wrapped box. How about carrying it in a file folder, briefcase, backpack, or even a plain brown paper bag. That way you do not have to present the gift immediately, and neighbors or others in the hotel / etc. will not have their attention drawn to the lady's incall location...

Chocolates, wine, lingerie, candles, oils, toys, flowers, they all can easily be concealed in a briefcase, duffel bag, shopping bag, backpack, or any other type of carrier that is appropriate to the context to the venue.
When to present the gift? Depends on the situation. Some gifts are best given early, but other can make a special round 2!!!
