I am pretty new here and I have a major concern that I'm sure affects a lot of us.  How does one "spot" or ensure they are not contacting LE when calling for a new provider?  So far I have only stuck with well reviewed providers, however, there are some with no reviews that I have found on sites (CityVibe mostly) that really catch my eye.  However, I am terrified about getting into any trouble.  Any tips?

Only stay with well-reviewed providers; no review, stay away. See the ones who have at least 5 reviews, then read the reviews of the reviewers. There is no guaranteed, iron-clad way to avoid John Law in the hobby, but the more research you do, the better your chance.

Stay away from any provider that does not screen, and also any provider who asks questions like:  "What kinds of sex do you like?" and other phrases that could be used to entrap you.

Finally, if she suggests meeting first at a donut shop, hang up immediately.

See well reviewed providers (minimum of 5-6 reviews) from established reviewers (guys with a similar number of reviews over time).

Or if you want her to play ring toss with donuts, get them at the grocery store yourself...

Too funny, mrfisher!

I can't tell if you where trying to be funny or not, but I do meet and greets with first time companions. That is the way I have always done it. I will not book with anyone without meeting them first. That does not make me LE. I would absolutely not do it any other way!
PS - I don't meet at donut shops

I honestly did get asked once to meet someone at a donut shop.

I sat and waited over two hours while crying onto my cruller.

You can see why now I have a bad association with these places.

Okay, just making sure. Two hours at a donut shop and you only had one Cruller! You must be some sort of health nut. I could eat a donut shop out of donuts in an hour. I once spent 50$ on donuts. Not just for me of course:)
