Use a prepaid calling card like you would find at Sam's or Walmart. At least you would be dialing an 800 number and then you put in the number that you want to call. The actual number that you call doesn't show up. You are just using your minutes up then on the calling card.

Three options I know of that will also provide anonymity. Anonymity can be important if the provider is later busted. Just ask Senator Vitter and that State Dept. dude.

7-11 is the cheapest but can be hard to find the phones. Virgin Mobile (bought at 7-11) is a bit more expensive, but good product. Tracfone has a bad customer service rap (check google) but still seems popular.
You're not under oath when you activate the phone. Invent a name and address (within the area code you want to have) and get on with it.
To keep anonymous don't log into their website, and don't register a credit card to buy more time. When you need more time, go put and buy a "Top Up" card with cash.
You can get a prepaid account SIM card, and swap the card from your current phone when you want to hobby, and stash the SIM card in a safe place when you are not using it. It is alot easier to hide a SIM card than a whole phone. And if someone finds it, you just mention that it is an old SIM card, and "you do not know why you are even carrying it around."
Since voice mail will accumulate on the number that is not in the phone, you will still get any messages, etc.
Just make sure you delete your last called numbers and incoming calls from the phone you are using. That way the call to sexy suzi will not be in the phone.
SIMs are a pain to replace, since it usually involves removing the battery, and you have to be careful when storing it because the card can be bent easily bent, which will damage the chip.
