Having been in the sex industry for many years and like many girls I know I was shocked when guys wanted to do daty [when you first start you are uncomfertable with strangers, know your doing something dirty and wrong]. This is pretty risky behavior and I believe your gut instinct is correct.
Not to insinuate the young lady is passing any along but she may honestly not be aware of the risk that she is putting herself in.  Maybe she feels because she is dealing with an UPSCALE clientele (which has absolutely no bearing on ones health status) that there is less likely hood she will contact anything.  Is she from planet earth?  Really someone should pull her aside and discuss the matter with her.

Not being a guy, I have to assume that in the heat of passion, some guys throw common sense out the window and want maximum pleasure.

To be honest this sort of thing goes on quite a bit. I can tell you that of the providers I have seen roughly about 65% of them after I have seen them a few times have offered me BBFS at an extra cost. I have declined everytime.
