You are going the wrong direction...

Colorado has the best rocky mountain oysters and Kentucky and Oklahoma have the best lamb fries.

Nothing wrong with mountain oysters, prairie oysters or calf fries.
Better tasting than those water creatures you seek.  
I'm going to bring you some!  Probably start you off with some lamb fries though
