It depends on the state. California is 2 party consent, which means you would have to at minimum be informed that there were cameras. Other states are 1 party consent, which means in this instance the homeowner would be the consent-ee and it's legal.
That said, I don't think this is a question of legality as much as it's a question of who your airbnb owners are and if they're creepy AF.
