Buchon in the Venetian and SeaBlue in the MGM Grand.  Buchon is somewhat similar in both "feel" and menu to Balthazar in New York, and while I wouldn't rank it quite as highly, it's still pretty darn good.  SeaBlue has very good food and is considerably less pretentious than most restaurants at the best hotels.  Both of these restaurants are somewhat expensive, but not at all outrageous like many restaurants in hotels on the Strip.

Panevino is excellent: Ph: 222-2400. It is on Via Antonio, just off of Sunset.

I was wandering through MGM Saturday - they had signs up for a new seafood restaurant, so I walked by it - it looked pretty nice (but I'd already eaten). Emeril Legasse (sp?) is allegedly behind it. Main courses were in the $20 - $30 range. I also noticed an Italian place that I didn't remember from before.

Hmm....maybe I can clear up the confusion.

The Seafood place is called SeaBlue, but Chef Michael Mina is behind it. It is fairly new and had recived good reviews.

Emerils is Emeril Lagasse's place. It was redsigned and just recently reopened. Again, I'm hearing good feedback.
