Well that is a good point.  I did assume and that can always get me in trouble.   To answer the question of what tipped me off.  She was dressed as if she was headed out for a show or dinner...., dress, high heels, make-up and her hair was not a mess as if she had been out all night.   She could have been an employee of the casino, but the dealers did not seem to recognize her.  So I assumed she was a provider.

I was walking through The Cosmopolitan on Monday morning around 7 am and saw the most stunning tall Asian woman walking through.  Dressed to kill and I have got to find out who she is.   I know she is ultra high end, but when I get back to Vegas, I have got to find her

You assume she's a provider? Was there something that tipped you off that she might be one? If so, I don't think you want to book her, even if you could find her.
