I come at this from a little different angle...

I play poker in LV and as a result it is usually a little uncertain as to when I will be available to play with a provider.

I have typically inquired to 3 or 4 providers and kind of put them "on call" meaning that I would like to see them on say a Monday evening, but telling them if they receive a definite date for that night they should take it.  In this way I can be pre-screened and the ladies know that I may call for an appointment.  This does require you being willing to wait a couple of hours for a provider to get ready and arrive.

There are also providers in LV that will be willing to see you at the last minute, but my experience has been that is if you have seen them before.  I once called a provider at 11:00 pm after getting out of a show and she was willing to meet at my hotel after about 2 hours.

I think the main point is to be honest with providers as to your interest and availability and make certain they are able to pre-screen you according to their normal standards.

.....I was all jazzed up and didn't know what to do. I had tickets to a 10 pm show at the Bellagio. I called Zach at  LV100 proof. I've worked with him before and I already had a scheduled appointment with one of his ladies for the next night. He said he could have Kenna available around 8 pm for me. Perfect!! Too fucking incredible!!! I had previously called him and asked if I could see Kenna for an early Sunday a.m. wake up call before I caught my flight home but found out they don't do early wake up calls. So this was destined to be. So, the moral of the story is.....see one of LV 100 proof gals...get verified and approved...set your mind on ease and let Zach work out your problems with you! Usually an agency is a good way to go about it.  Just get pre-screened that way its easy when you call them up after your original date cancels.  

Or I have a couple regular gals, so I can usually just get ahold of one of them last minute.

The main thing is-have a BACK UP Plan!!  

But sometimes I've been canceled on in the middle of the night like 2-4am and in that case you should just go to bed.

Let me say, first, that I am Totally against 'double-booking'.  But, getting pre-screened, is a good thing.  Vegas has a lot of Bait ans Switch, and upsell.  But, there are some of the most best lovely ladies anywhere.  
There are just not very many last minute choices.  Ranches are about 1hr 15min away.  Only 2 reputable agencies, with limited staff.
