Tao at the Venetian Nobu at Caesars Palace (outrageously expensive but fantastic) Also, let me know (privately if you wish) which hotel and I can make some suggestions.
You can eat on the patio overlooking a green park or eat at the bar with a live acoustic guitar set. The drinks are great, lots of fish options on the menu and friendly atmosphere comprised of both locals and tourists. It's nice to wander around after dinner and sometimes there are events in the park.
