I'm doing decent in Math, Science, English and Woodshop, but need some help with Human Anatomy!    

who was paying me for a 6 hour date tell me that I couldn't have a bottle of water because the mini bar prices were a rip off. I told him I would leave the $7 for him to cover the cost of a bottle. This is the desert you know.

You have done your homework on the perfect woman to meet your desires. Now what?  
   
 1) If your not certain. Don't mirror it onto her by sending numerous emails with nervous questions. You will most likely turn her off or make her nervous. (If you are that unsure you might want to consider cancelling)  
   
 2) Do let her know you are looking forward to it and when you will be in touch.  
   
 3) It would help both of you out if you touch base with her 24-48 hrs before the appt, if you have booked in advance. You will know you're still "in". Plus, you make her feel special because she knows you are looking forward to the date.  
   
 4) If you're not meeting for a drink or dinner. Offer to have a refreshment on hand regardless of whose place you're meeting at. (Trust me, on occasion you show up and no one thought of it. Three hours of sexercise later, no water, nada)  
   
 Just some simple suggestions to start things off on the right foot.

I always try to have at least bottled water available.  One thing I do is to offer water or whatever, in a sealed bottle to the lady.  Thus trying to assure her that the drink is safe.

Plenty to drink at my place ! Whatever you like you can find it !

You nailed back and forth questions on the head. Especially when I've answered them in my FAQ's - can take me much longer to relax with a gent.

I always give and show the bottle of wine or any beverage to the provider so she feels comfortable sharing with me. I also open it and pour it in a glass in front of her. It builds the trust for both of us, so we can have a relaxing time together.

Ladies, there are things you can do to make us more comfortable and happy as well.  This will lead to good reviews, good reputation, and repeat customers.
