In Search Of
Despite the fact that we're a large and economically vibrant city, rates here (not including mine 
)are lower than many other places in the U.S.
Also, we have great restaurants! 
Most of my overnights are around 12 hours, so that leaves a bit more time for dinner, hanging out, etc. And usually we sleep less than 9 hours, so that's even more time for ... non-sleeping activities.
As far as if an overnight is worth whatever the lady requests, well, everyone's going to have a different opinion on that. Some will change their minds (whether pro or anti) after actually experiencing one; they're *quite* different from a traditional, shorter date. You never really know how you'll like an overnight until you try, and a lot will depend on the individual lady and your mutual compatibility. I love overnights (financial incentive aside!) because they really do allow both individuals to not worry about timing. Both of us ain't going anywhere until after dawn; the relaxation that comes with knowing that can't be found with any other kind of date I've encountered. That is, with the exception of full day/weekend dates.
And, yes, it is a profitable business. That's one of the main reasons most of us do it. However, all the ladies I've come across who offer overnights do so at a significant discount on their "hourly" rate, so if you look at it that way, you're getting a heck of a deal.
It's enough that I'm not going to starve soon but not so many that I never see my own pillow.

Have you looked into sugardaddy/sugarbaby arrangements? I hear they're even more difficult to navigate (i.e., neither party leaving disappointed), but it's something to consider if you haven't already. From what I've been told, you need a lot of patience and luck to find the right lady, but happy endings (so to speak) aren't impossible.
