An organic Chicago Hot Dog is an oxymoron. Any organic hot dog will undoubtedly suck. The best hot dogs are any Vienna hot dogs from a reputable hot dog stand. There are literally hundreds in the Chicago area. The best, in my humble opinion are at Super Dawg. Two locations: Devon and Nagel in Chicago, and Milwuaukee just south of Dundee in Wheeling. A Chicago Hot Dog is usually a Vienna Hot Dog. They are all beef (100%), but I'm not sure they are all natural. They are Kosher style (not Kosher). Chicago Style Hot Dogs are available at most hot dog stands. If you're in the Looop, try Portello's. I love them, but have not looked at a hot dog the same way since I read Sinclair Lewis' "The Jungle". Which, by chance, was set in Chicago.
I'll have you know that my handicap is . . . . . well, umm, . . . . but hey, at least I swing the club, drink beer on the course and have a good time with the beer cart ladies . . . . . .
This is not a traditionalists place. But it's one of my favorites when I am in Chicago. Owner/Chef comes from fine dining and some of the dawgs are conceptual pieces. Good stuff though. Truffle fries are a definite.

Even if you were to find an organic hotdog, I don't think there is a way on this planet they could make that brilliant neon green relish anything but questionably bad for you! (And yes, the relish is an essential component to the hotdog. Don't like it? Go to New York and get your dog there.
However, if you are food educator, then I'm sure I don't need to explain to you the 80/20 rule. Chalk the hotdog up to part of your 20, and just enjoy it without the stress. As to where to go, I'd recommend Hot Dougs. The most extensive (and exotic) menu and-perhaps most meaningful to you-I've heard they encase their own meats. While this may not mean organic, it does mean their dogs are probably probably loaded with significantly fewer preservatives since they don't have to ship around the country and sit on the shelves for weeks before consumption.

Chicago has a lot of restaurants who buy from local farmers or the Green City Market, and most of these food items tend to be pasture raised (meats and cheeses), and organic, usually with full spectrum fertilizers (veggies). A many have already said, you probably aren't gonna find many places that claims to serve a "organic" hot dog. Most will just go with the ubiquitous Vienna dog or a Kosher dog. They do sell organic hot dogs at the grocery store, but that just means its uncured, grass fed meat. It's still a hot dog, that is to say its made from the rest of the cow they couldn't otherwise sell as meat. Rather than wast the sodium and preservatives on a regular dog, try the gourmet dogs at Hot Doug's or Franks and Dawgs. Those sausages hve a better chance to be made outside of a massive meat farm.
I think there are any number of hot dog joints where you can satisfy your desire. Like people have said, the traditional Chicago dog is a Vienna with no krtchup, ever.someone said, no mustard. You might try Gold Coast Dogs but my favorite is Portillos.
Hot Doug's on 3400 N. California Avenue has the best gourmet hot dogs in the city. Go to the "Wiener's Circle" at night just south of Diversey on Clark/Broadway. If you are there late at night, you will be insulted with tons of racist commments by the staff as it is part of the experience. You will be called everyting such as an f" white piece of shit here. Don't get too emotional since it is just an act. Ask them for a "Chocolate Shake,"
