A box of chocolates or some small token of appreciation is always appreciated. For larger gifts, I've had friends give me clothing that doesn't fit or that I would never wear again, beauty products that I'd never use, and even gift cards to places I've never frequented. it is always polite to accept the gift and to be grateful to the giver, but I personally appreciate gifts that I'll use (or want).
Some providers maintain "wish lists". That's often a good starting point!

I would say, if I were a client hoping to give a little extra, I would look to see if the lady has a gifting section on her website. If that is the case, and you enjoy giving gifts, I've always had fun opening gifts during a date. It's a great ice-breaker, especially for the first date.
It's also fun to get a little gift card with an "excited to see you" note in email before the date if pre-booked. Even if it's small, it's a nice little thing to build up anticipation. Then the rest, maybe tip in person or maybe use the rest for a gift?
Just some ideas. But wish lists would be your greatest clue as to whether or not gifts are a love language for your provider or not. It's not a perfect fix, but it's a good clue.
No wishlist? Nobody, at least that I know of, wouldn't get excited or wouldn't feel special if somebody tipped them. In my opinion...
