I want to get an anonymous prepaid cell phone for hobbying.

Does anyone have experience with these who could recommend a specific phone?

What I am wondering is, do I have to give any personal info to set up and use the phone or to buy additional minutes?

Do these phones offer voicemail service?

Any recommendations on how to do this anonymously are welcomed.

You can buy the prepaid phones at any major phone company.

You  can  buy minutes at any CVS, Walgreens, Walmart etc.

You do have VM features.

You can set up a phoney name and email

No Bills  to house etc. or  any name association

Just add minutes as you go or need them!

As Brooke said -- it's easy.  I bought a Trac Fon at pharmacy and a prepaid card of minutes -- use cash.  You can activate the minutes over the phone -- total anonymity.  Just don't let your S.O. find it at home...
