It seems that most people are able to make appointments in advance.  Are there any services that cater to people in town for a night, last minute?

You're well within your right to continue doing so but if I may, newbie and last minute aren't a formula for success if you are serious about your entry to participating in what providers have to offer you.

Even if you travel with some frequency around the city most professionals can anticipate where their business will carry them.
If you are legitimately new and move about try a little planning.
If its even just making a list of providers you are interested in and touching base with them for verification so that you may schedule off-the-cuff when you're available to do so.
