Atlanta isn't know for specific dishes so much as variety

You can get great food of almost any sort in Atlanta. For good old fashioned southern cooking Mary Mac's in Midtown is famous and big with tourists, however I also like Homegrown in Cabbagetown. Beaufort Highway is also worth a mention, it's famous for its Asian and Latin American authentic cuisine. Do some searches on Yelp or Urban Spoon, we truly have a great example of almost everything!

My two suggestions for a Northerner

The Colonnade - Southern cooking that's way better than Mary Mac's. They filmed Identity Thief with Jason Bateman and Melissa McCarthy there.

Gladys Knight's Chicken and Waffles - needs no explanation. Order the Midnight Train to Georgia.

Some Not Mentioned

AvaRaleigh and HarlandSanders had some good choices.  

For Southern cooking, I'd like to add the OK Café at the corner of West Paces and Northside Parkway. Since you live in New York you may not have ever had okra, corn bread, fried green tomatos or squash.

For Soul food, there used to be some places near the King Center. One was called The Beautiful Restaurant but that was several years ago and it may not be there.

O K Café for sure and it recently reopened after a major renovation after a fire !!!  Located at West Paces Ferry Road and I-75 on the North Side-very near the Governors Mansion and Buckhead !

VARSITY!

THE VARSITY on North Avenue (near that trade school aka GA Tech) is a landmark of fast food lovers as it is one of the largest hot dog vendors in the world and super-easy to find.  

It's grease, but it's good. Nothing like it anywhere else.

2 chili dogs, an order of onion rings and a large Frosted Orange.

I stop there anytime I'm in town.

I highly recommend. ...

Since I'm a meat, potatoes and seafood kind of girl, I highly recommend Chops, the lobster bar. Hal's is also fantastic as well as Capital grill.  LOVE Imperial Fez! That is Moroccan food :) For good olé southern food,  the Colonnade Atlanta.  It's on Cheshire bridge ;)  
I'm an Atlanta native and I can tell you Atlanta has soooooo many fabulous food options!

So many good restaurants

I am from the north and get a lot of visitors.  I think Atlanta has about the best variety of things to eat.

If I had to send you to something Authentic it would probably be BBQ.  Fox brothers in Inman  Park, Community in Decatur or Smoke Rings by the GA Dome rock.  If you want upscale Southern go to South City Kitchen.

A couple of my absolute favorite places to take guests from out of town are:

JCT Kitchen
Two Urban Licks
Optimist
Luminary at Krog Market

Tapas
Iberian Pig  
Barcelona

Steak
Hals
Chops
Fogo de Chao (not unique to Atlanta)

Caasual Seafood and a great sports bar

Other than the Big Chicken in May-retta, I cannot think of a bigger food landmark in the area.

"Wadyahave?" Naked Dog and Rings Walking with a Coke.
"Wadhahave?" Chili burger here with a Frosted Orange.
"Wadyahave?" ..... oh, the possibilities!

The Vortex- double coronary burger

Some of my favorites...

Six Feet under is great.Any of the Rathburn places are superb. Agree with TL on Hal's . As Taylor said- is right- the Vortex cardiac burger is sick- but they have other fantastic choices. Maybe the Fish Market.Damn now hungry.

I love this site so much! Yet more options

I was getting jaded because my mouth was watering all over these wonderful women.  Now, it is watering over these food choices.  I am a foodie and been in ATL since 2008 and have learned a lot tonight.

One favorite: Nuevo Laredo for Mexican.  One of the best Mexican experiences you will find East of the Mississippi.  Food tastes like it does in South Texas border towns.

Additionally, off Windy Hill Road north of I75/285 split are the "Papas" restaurants: Pappadeaux's, which is upscale Cajun seafood (you gotta try the fried alligator for an appetizer, with lemon and tobacco), and Pappasito's, upscale Tex-Mex.  sweet potato pecan pie and banana pudding at Pappadeaux's are to die for, as is the Tres Leches cake at Pappasito's.

SOUTHERN FOOD!

Atlanta is known for southern food! Mary Macs, Gladys Knights- Chicken and waffles! Also- Holeman and Finch, Buttermilk kitchen, Korean BBQ (Breakers, 678, Honey Pig), and Vietnamese (Pho Dai Loi, Nam Phuong) are my favorites in Atlanta. Any other cuisines are basically better in other cities, don't go to vortex- way over hyped, not great burgers.

A foodie weighs in....

I'm in agreement with Nuevo Loredo and the Vortex. NL for Mexican, Vortex for pub grub. If you are a foodie, like me... Shrimp and Grits at South City Kitchen; try hickory grilled rib eye or grilled North Georgia trout at Blue Ridge grill (link below). Also, for the southern blue plate special, try the OK Cafe in Buckhead. I'm in disagreement on the Varsity. If you didn't grow up with it, you probably won't "get it". It's like White Castles or Coney Island. It kinda has to be nostalgic in my opinion. Feel free to PM me for a more detailed chat. Bon appetite! Lily :)

I flew some from the Delta terminal to NY,

My clients on the other end said "best 3 hr cold chili dogs I've ever had".  And they have the real Nathan's.
Honestly I cannot think of another "You must go there" kind of place in Atlanta.
