IMHO you must visit:
Prices Chicken Coop (a working persons fried chicken/fish place) no dine in
Brooks Brothers Hamburgers (a blue collar place in North Davidson arts area, cash only) no dine in
R&R bbq in Concord (clean no gristle NC Eastern/NC western bbq)
Amelies French Bakery in north Davidson arts area
Lang Van's authentic Vietnamese cooking, Shamrock drive
Jai Pur Indian buffet/Maharani Indian restaurant, S. blvd/Kings drive
Roosters, Morrison blvd  
El Pulgarcito, central ave, (the kind of place were you are the only non-Hispanic,  go for the seafood soup it is excellent but only offered on the weekends)

Menu changes frequently but everything is incredible
And yes , from the outside it does look like a hole in the wall place.
Their macaroni & cheese is an absolute must.  Like you.

In Charlotte  I would say Portofino's is a great place to eat

Raleigh you can always find good food at "The Pit"
