I know in some cities, almost all the major hotel chains will offer rooms at a day rate, but this is really based on availability.  I have booked rooms in NYC and paid day rates - not for play, but just to have a place to rest and work in between meetings.  I had never considered it for play because you cannot book a day rate room in advance.  But, I think which hotels offer day rates varies by city and availability.
