I think we have to make a distinction here between vaginal fluids mediated by estrogen and the "ejaculate" coming from stimulation of the G-spot.
According to Dr Susan Love, eminent UCLA researcher and clinician, a little less than half of all menopausal women experience vaginal dryness and diminishing lubrication when sexually stimulated. Of course, this can be alleviated by inserting E3 (estriol) suppositories locally, but bear in mind that all women respond differently and that there is no set pattern. Some women experience vaginal dryness even when administered oral or transdermal estrogens; others have an on-off pattern which is less mediated by gonadal hormones and more by neurotransmitters.
In terms of research on ejaculate from G spot stimulation, subjects have been overwhelmingly pre-menopausal (one famous study was performed on spinal cord victims, all of fertile age.) My suggestion is this: if you really want to find out, why don't you round up a post-menopausal woman or two, get loads of lube or ask them to prep for a couple of weeks with E3 inserts and then crook your finger and go at it. Find the G spot and see what happens! Of course, it would be a very small research sample..but imagine the possibilities!

Various studies on this fluid have come up with differing results. A group of scientists examined some of this ejaculatory fluid and discovered prostatic enzymes, speculating that the G-spot is the equivalent of the male prostate.
Another group of scientists examined the fluid and said it was very similar to urine. Latest thoughts are that the fluid is an altered form of urine that changes in chemical composition due to sexual arousal. The research continues. In the meantime, drink up!
