Male to female vaginoplasty typically does a good job with the reconstruction of the internal vagina itself but not with the external parts. Clitoris has the nerves but not the visual structure. Lips tend to be under formed but maybe you like this for the “ youthful” appearance.

There are many, many reasons why a women can have difficulty getting naturally moist, let alone wet. Very few are a result of getting a dick chopped off.  Maybe she's(?) shy. Maybe she(?) has a physiological or chemical issue. Maybe she's(?) not sexually attracted to you. Maybe your breath is so foul she(?) can't stand the idea of your tongue going near her(?) labia.  Maybe her(?) family practices the barbaric act of female circumcision - which is admittedly similar to chopping off a dick. Again, not judging...  

 
Have you suggested using lube? She(?) would know her body better than you, and probably as well as her(?) doctor.

As Herb said, there are lots of reasons why a woman might be dry.  I've encountered my share, but most of them turn out to be perfectly enthusiastic about sex once the activities get going.  I always add a bit of lube to the piston and cylinder before engine assembly.  It always helps get things going, even when it's not technically necessary.  Just be sure to tell her/ask her you're doing it beforehand since some women are averse to lubes or only ok with specific types.  I've never considered the possibility that a woman I've been with was a trans woman without me knowing it. I have, though, been unsure after only seeing pictures.  So I always ask if I'm unsure.

Get a sample and send it off for a DNA test. I am guessing that the easiest samples to get are a few strands of hair as long as the root is attached. Check the pillow. Check the towel from drying her hair after a shower / shampoo. Grab / yank a single strand ("Oh, you have piece of lint there, let me get it. [yank] Sorry! I got it though.") I don't think that 23andme will test a hair sample. But check with local private labs. $50? $100?

EDIT: If the lab asks, Why? do not say you're trying to figure out if your SB is trans. That sounds like you me trying to "out" someone. Tell them that you found these hairs on your wife's pillow and you want to know if she's cheating on you with a M (No! Divorce evidence!) or an F (Whoo-hoo! 3-way!!).  Or come up with some other story.
