$$$ can get you provider that range from bad to good. My question is why do people pick the bad ones when there are good ones available? Is it ignorance, or do people have their own idea of what "good" is?

Anyway, here's my answer to that, although I'm sure johngaltnh has already posted something explaining this using official, academic, microeconomic terminology:
In a nutshell, a woman will not price herself below what she thinks she is worth even though the resulting Revenue (Price * Quantity) established by the intersection of her demand and supply curves is less than what she might hope to make.
But seriously, why should we be any more astonished (Not surprised, that's when you are encountered unexpectedly.*) that there is a variation in providers at any price range when we see this in the marketplace as a whole.
For toasters to cars, there's Consumer Reports. For the hobby, there's TER.

Well said! TER should consider adopting that as it's tagline. I think it's better than "A new kind of meet and greet." However, some may find it offensive as it may be construed as objectifying women.
It's not so much as what she thinks she's worth as it is what she wants to get, or that she is just not willing to do the deed for less.
Many providers are intellegent, savvy and realistic. But just like the general population, of both men and women, some are just a few licks short of a full pop. I'm amazed at how often a very young provider who can't be attractive in anyone book describes herself a 'gorgeous' 'great body" and thinks she is (as the phrase goes) "all that!"
If a lady thinks that way, in error, she way be likely to overprice herself.
Then again, if you don't try to negotiate her price down (which I NEVER would) you don't know if she sets her price high but takes what she can get, so to speak.
Let me give some additional data that would be interesting.
See table below, corresponding to rates and the number of ter-listed providers with those rates. Please note that the peak -- the top of the curve by a huge margin -- is in the $200-$299 range.
A lady who has set her rate at $300 is consciously setting her rate at the top of what I would call the ordinary curve, considering that the rate curve drops very quickly beyond $399.
So the lady is setting her rates at the highest she believes can be supported at $300. This makes perfect sense considering a woman's consideration of her own value.
Of course, some women who start off at $300 will find they can push the rate all the way up to $1000 and beyond; and others will find that they need to drop their rate to a lower one.
