I've never gone uncovered with a regular. However, I don't consider the cover (or lack thereof) to be what determines if we have become 'real lovers'. More likely, a removal of the donation and the sexual expectations attached to it.
I won't rant about the health risks, but I do think you should seriously sleep on it. You alluded to both of you having other friends and that doctor can't assure you she isn't bonking them uncovered.

that your ATF provider is now your lover/love interest and you can share OTC together, i believe it's a wonderful thing and i'm sure it happens in this hobby/industry. As for you both going "uncover", if you for sure she is your exclusively and you're fine with it, then by all means. But if you feel that you have to be covered no matter what, just tell her that.

I'd say don't do it. Unless you are all getting tested together and share your results and have exclusive sex within the group (inviting no one else) but even still can you really trust that no one would stray? Condoms aren't 100% effective ... So even if one did stray outside with safe use something could be contracted.
