If you're referring to foot-treading of grapes, it's actually a gentler process than mechanical maceration. And it hasn't been done bare foot since the "I Love Lucy" days -- too many health regs and OSHA protecting people from getting the sharp ends of the vines jabbed into their feet, thus ruining a batch of juice with bloody leakage.

Gotta wear synthetic boots and observe sanitation protocols going into and out of the container, so there's little to no risk of contamination.  

Low tech but it can produce some very nice vino!
