This is not a legal question per se, but I am curious of what men think.
Why would a man choose not to marry a hooker?  Whether she was still hooking at the time they met or she had stopped some years ago. If you truly love someone, why should it matter?

But, anyhoo:

I think that most guys are already married or single and don't plan to marry anytime soon.

I would think they would pick a wife based on considerations other than looks or their sexual prowess such as social standing, and social traits such as being among their peer group, religion, etc.  The person's attitude regarding rearing children is another major factor.

Men see escorts for sex, mostly.  It's an entirely different situation from marrage.

On the other hand, if I liked an escort enough as a person I would consider marrying them, or at least committing to them in some fashion.

Someone's past is important because it tells about a person.  Someone with experience like a surgeon, a  trial lawyer, a business woman is just more exciting than someone who has not done anything interesting  She is just more interesting. To me, someone who has been a provider is also more interesting.  If I were single and looking to get married, a provider would be interesting to me. I have always found providers in general to be interesting and exiting as people.        
Someone who was still an active provider and did not plan on stopping poses other problems about jealousy etc and I don't know if I could deal with those issues so I would have to be in the situation to understand my feelings before I could undertake to commit to an active provider.

Unless you are able to provide for her in such a way financially that she can afford to stop, you won't be in a position to ask her to stop working.  And most guys really are not gonna be cool with that.

Also, she might always have trust issues with you, since you and her met in this manner.  She might always wonder if you're out fucking around behind her back.

And while it's "just sex," it doesn't stay that way for long.

First of all, so many guys fall for providers it's a known syndrome called "I've fallen for a provider and I can't get up."  So the best thing is simply not to let yourself get emotionally involved.
If it happens anyway, how do you know your feelings are reciprocated?  Most often, they aren't and you've simply managed to confuse GFE with the real thing.
Now let's say your feelings are actually reciprocated.  Well, you go for it, I guess.  I think you're right that the best providers are more interesting, out there people.  I know several who are married, and even married to former clients.  One of them made it a requirement she be able to continue providing because she simply gets off on the sex, especially sex for money.  They have a complicated relationship but it seems to work for them.
In other words, there is no single, simple, "right" answer here.

Most married guys are not here for variety, they are just here because there is no love at home. Variety is just a wonderful bonus. I am guessing the mindset would be that a marrying a provider eliminates the dread Hawaiian disease "lackonookie" form the LTR. Even though I my spidey sense tells me that's a YMMV affect of getting into a relationship with a provider.

For me, I can say that I would hardly care about someones past...I can also say that I would harbor zero jealousy if she so chose to continue providing...that's just how I roll. But...I would have an issue with things like extended overnights and such...

I have also heard in my civie life, and on this board, women who dial back their sexual menu when they "fall in love"... i.e. loving someone too much to do a threesome, or other fun sexual stuff they have done in their past. That to me would be a big time problem.

It all depends on both parties. Some men look at the future and move on and other men are stuck in the moral dilemma and what others think syndrome.

If the situation is correct, I would not hesitate. That’s just me.
