This "brilliant idea" is likely to follow the same arc as Hooters and those all-girl car washes.  Which is to say it will get corporatized, homogenized and mainstreamed to the point where it will be as titillating as a trip to your local supermarket vegetable aisle.  Plus ca change . . .

That's  something that called my attetnion when I first came to USA years ago... Coffe shops with  sexy baristas were not so popular as they are in Chile.   I thought it was  cultural thing.
In chile there are what they call "Cafe con Piernas" (Coffe with legs). The name comes from the  baristas wearing  really short mini skirts, even during the winter... Girls make a lot of money on tips...
The place looks like a bar, but instead of liquor, they serve coffe. You can see gilr's legs under the bar. Usually the coffe machines is on the  other  side of the  bar, that way  costumer have the chance to see the  girl's butt Nowadays, the  trend during the summer is that girls even wear tiny bikinis...
Those are all  over Santiago-Downtown  and are very common  places for gents to meet for coffe or who know's ... talk about  business???  
So, if you ever  go to Chile for business, you know where  you can close your deal
