Advice pieced together from the guys who did:

Let her know in advance.  She'll smell you being uneasy and it's better she knows why

Don't pick with your eyes only.  Make sure you & she have some amount of chemistry.  E-mail chat or talk before you pick.

Don't rush it.  No 30 min deals.  90-120 probably best so you can enjoy the whole experience.

Most of all, pick someone safe and reliable.  Well reviewed is a must.  No time to take one for the team.
