I recently met a provider for coffee, OTC at that as she loved the idea as well, as a sort of ice breaker before hooking up.

It was awesome, and added a lot to the date.  Unless the "whole meet a gorgeous chick at a hotel bar and go up to her room" is part of the fantasy, and I could certainly see that, see if she will get together for a coffee a day or two before.  Great chance to establish a connection beforehand.

Hotel lobbies are full of people who don't have a room.
I have wandered around a few, with no problems..
The only problems you create...
You create them by looking guilty.  
Dont fidget, check your pockets.. Stuff like that gets you noticed..
I went to the wrong hotel yesterday. Hung out in the lobby.
Read a paper, look at you phone... Look busy. Thats all.
Once I figured out I screwed up. Wanna know what I did?
I asked the front desk if I was in the right place. They said no.  
Then gave me directions to the correct hotel.
Did I say I am here to fuck a hooker? No.
I didn't have to say anything. They get that all the time.
You really want to keep hotel security off your back?
Spend money. Buy a drink. Get some food...
It is all about confidence. Look the part.

If there's valet parking, the bar is a great place to meet (& get the ticket stub stamped for free parking)

If a man is really that afraid of life, it must suck. In all fairness, I really don't understand being that way, so for what little my advice is worth: Be brave. If you get arrested for meting a gal at a bar, let us know.

I don't think it's a good practice for a provider to meet every guy in the damn bar, if she is staying for a week in the same hotel...asking for trouble. I don't even walk down to the car with the guy if we are going to dinner because of this...I meet him outside, alone.
