If you could take a sabbatical...
....from your normal day to day life for up to 3 months what would you do? No internet and minimal phone coverage should be assumed.  
I'd start with the Camino de Santiago, something I have recently decided I'd love to do...  
I put this last time and my desire to do it hasn’t changed  

Travel.  I'm not sure exactly where I would go, but I would definitely travel.  

Travel to UK and Europe for sure.. Read a lot of books..Classic literature like Dickens, Doyle, Orwell.   The news i can get from newspapers.  As long as I get regular updates on my financial status, I think I would be fine getting away from the the addiction of the Internet for a while..  

Might be fun to do something like visit a bunch of F1 race tracks and drive one of the older, "decommissioned" F1 cars around the circuit. The trick would be to find the places that will not limit you to driving at half speed. Maybe see if it can be scheduled so you could also see the race on the weekend too.

European tour starting and ending in Amsterdam with Berlin and Prague in the middle

from my normal life it would probably mean I got bad news from my doctor that I'm dying, so I would book the largest suite on the Queen Mary II, make two providers a six-figure offer they can't refuse to go with me, and see how far I get before the two of them finish me off.  It's a better way to have assisted suicide than the way most people choose.  I'd rather go out with a boner than laying in a hospital bed with a catheter in my dick.    

I need to go somewhere where I can be one with nature, otherwise I'll have critical withdrawal symptoms from normal life.
