I've done a few doubles sessions, here's my take. I agree with your thoughts, duos don't really do it for me. As you point out, I think the initial fantasy was tremendously exciting for me; to live out the porno where one man is serviced by two lovely women. However, after the novelty wears off (which took about 1.5 sessions for me), my money is better spent tete-a-tete. IMHO, duos look good on paper, but the reality doesn't match up.
From a service perspective, yes, either they are doing a lesbo scene, and you are watching, or they are essentially taking turns on you. In both cases, it feels more artificial to me, and ends up being more distracting than anything else. From a value standpoint, it's also a losing deal. Although recently some of our local duos have had appealing specials, in general you're paying double for the same amount of time, and as mentioned above, not necessarily getting double the service. I agree with you, better to book two hours separately.
Why the popularity? Well, I think this is coming more from the providers side, who advertise. Naturally, providers love them. They are safer, since another women is there, they are less work in terms of service, and they bring in the same amount of money. Some even charge a premium for doubles above their hourly rate. I think you'll find far more women advertising doubles, than reviews of doubles sessions happening.
Having said that, like any activity or fantasy, there are certain men who really go for doubles, and this fantasy is highly appealing to them. They will always seek out good doubles experiences, and be willing to pay a premium.
As always, YMMV, and I would never completely rule out doing another doubles session. If a really hot lesbian couple surfaced, open-minded, creative and verbal, I might go for it, but for the most part, I stick with head-to-head matchups.
