I've emailed Desiree Noir a few times with no response. I'm responding to her ads on GFE Monkey, for one, where she's listed as "available now". She doesn't list a phone number. What am I doing wrong? Can some of you guys who've seen her tell me how to get a hold of her?

Are you ready, ready69?  That website took Desiree's information from TER and created an ad for her.  She had nothing to do with it.  They do it to make themselves seem busier than they are in order to get other providers to advertise with them.
