I like hard-boiled eggs... sliced in salads, egg salad, deviled eggs or just plain with a little salt.  I found the perfect cooking method, but the problem is they're a pain in the ass to peel.  If you use fresh eggs, they're even harder; the shell sticks to the egg white and you end up with mangled eggs.

Then I saw a video on YouTube about how to remove the shells without peeling.  It's totally amazing; so here's how to make the perfect hard-boiled egg, and then how to peel them (I peeled a dozen eggs in less than four minutes).

First, put eggs (right from the refrigerator( in a pot and add very cold water until it's at least one inch above the eggs.  If the water isn't as cold as the eggs, leave them in the pot until the temperatures equalize.  Then (and this is an important step), add a teaspoon of baking soda to the water.  This raises the pH and reduces the tendency of the shell to stick to the whites.  Place on high heat and bring to a rolling boil.  Immediately remove the eggs from the heat, cover and let sit for approx. 17 minutes.  Drain water, refill with cold water (you can also add ice if you'd like)... I just put the pot under the tap and let cold water run into it continuously until the eggs are water temperature.

Now here's the amazing part.  Instead of peeling, crack both ends on a hard surface, remove the shells from the two ends and BLOW INTO THE SMALL END!  The egg squirts out of the shell without peeling!!!

I'm a fan of Ramsay's shows and here he shows how to cook a scrambled egg. I've been perfecting it over the past month and I really enjoy scrambled eggs now. Before they were the usual: rubbery if overcooked.

I have NO problems with Hard-boiled eggs (just did 3/4 a dozen the other day)

The trick is that you must let them CHILL in cold water.

Also a little bartle doo helps

i just use tap water just above the eggs from the fridge, bring eggs to roiling boil, turn off burner, leave on it for 15 minutes, then pour water out replace w/tap water, set for 10 min. min, crack from fat side & around, & peel from the fat side under water, easy pealing....
