Looks like I will be in town next weekend and as I'm not familiar with LA and Orange County I was hoping for a few upscale hotel recommendations.

Since you didn't say if you would be in LA or OC I can only let you in on the OC recommendations.
The Laguna Hotel is right on the water in Laguna Beach, very nice & can't beat the location. it's my favorite for a getaway.
If you've got the budget either the Ritz Carlton or Mondrian in Dana Point are as upscale as you can get.  
More "urban" is the Westin at South Coast Plaza that's near the Performing Arts Center and the shopping center.
The Grand Californian at Disneyland is actually a great place to stay, as long as you don't mind 9:30pm fireworks shows.

I'd add the Resort at Pelican Hill to that list. If these are all too pricey, the Hyatt's both at Jamboree/405 and Jamboree/PCH are nice and more of a value alternative

I find it a litttle odd, as I do not recall the fireworks being seasonal.  But I haven't heard a single Boom Boom all week?
