As far as a list of services, this causes some debate in the hobby community.  Some local DA's (this is true in the county I reside) will insist a list of services like bbbj, cim, dfk etc are an act of solicitation. However, you will still see providers with list of services.  You should also read the juicy details of the reviews to verify services offered.
As to why the call your work #, to verify you are, who you say you are. Many times, they will simple call ask for you, if the receptions inquires, the escort will simple say something like "confirming a doctors appointment"  I would only give this type of info to well reviewed providers.  Of course you will need VIP membership to read the entire review.

Most providers will put their rates on the website. Most are leary of putting any type of services that they provide on the site (some do, however). Those that do not, assume that you are a man of some intelligence and will read between the proverbial lines to figure out what may or may not occur during a session. Translation: Pay for a VIP membership and read and study the reviews!!!

As for your work information, be careful. While they won't sell it to Hollywood (sorry, if you had illusions of making the big bucks), some ladies are not as careful with the information as others. Most well reviewed providers will however keep it secure. (again, pay for a VIP membership so you can get a feel as to whom hobbyists support as the top providers in your area) They only want a work number to verify that you work where you say you do. It's one way of screening a client. But if you have any concerns about your work information floating out in the land of the unknown, than do not give it to anyone. But be prepared to be verified and screened in another way.

At first I would stick to experienced providers with at least 10 reviews.  You are more likely to know what you're getting.  As for the numerical rankings, those can be deceiving and are not used consistently by reviewers.  If you want to understand how the numerical rankings are supposed to  be used, go to "Reviews," then to "Submit a Review" and read.  But the numerical scores are less useful than the Juicy Details, which at least describe a session and what acts were performed or excluded.  The basic details at the top of a provider's page are set when the first review is written and rarely are changed.  So they may be inaccurate.  This can even include the rate, which should be checked on a provider's web site or current ad.
