I'm interested in contacting a provider and I have no experience with this before so I have a few questions.

1) The provider has a list of minimal info that she requests, and in that list, one of the items is "Services interested in."  How exactly should I answer that question?  Is it best to answer that in a vague fashion or be up front about exactly what I would expect?

2) What precautions would one take to make sure that you are avoiding LE?

3) Outside of deleting e-mails and internet cache files, are there any other recommendations for keeping your information private from others who use the same computer?

Thanks for any responces, and again this is a first time thing, so any advice would be appreciated

First, stay away from any provider who ask that you describe the services you are looking for. I have never seen a legitimate provider request that type of information.  Find someone else, because you could be walking into a bad situation. You know about review sites, use some of the tools that are available to you on such sites, doing so should prove to be a valuable choice.
I cannot give advice on deleting email.  Unless you are a highly skilled information technology person, there is a high likelihood that you are going to leave a digital trail that anyone that is determined can.  Deleted email often go to at least one other folder on your computer, you need to understand what those folders are and insure that they are cleared. Also you need to insure that the sites that you visit are not retained on your computer. Most computers will retain website information that can be accidentally found by others.
Because you appear to be completely new at this, the most important thing that you can do is sit down and think hard about whether you want to start hobbying.  The pursuit can be addictive and you need to understand whether you can avoid getting wrapped up in some of the pitfalls.  Good luck, be careful and I hope you find what you are looking for.

I agree, it's a dangerous question.  I have been asked it, and I asked back what so you mean?  The request was not for specific acts, but with regards to full service, massage, role play, or dom.  Best to discuss over phone, yet being vague.  If you have any doubts about provider, best to avoid - there will be others.

Do not see provider w/out reviews. Read them (reviews) carefully and decide. Combine this with 3 previous (good)advises and you'll be OK.
DO NOT SEE PROVIDERS WITH NO REVIEWS!!!!!!!!!!!
