If she's well known/reviewed, then she's legit and is trustworthy. You should be thankful and let her know you appreciate her concern for your and her safety. If you still plan to  see her, wait awhile and make sure you see her at another location. Survey the new surrounding area for possible LE presence and go from there. If you're not comfortable, don't. Follow you instinct. It's there for a reason and often times, it's reliable.

You'll never know if she save from a considerable amount of trouble, or if she was just being paranoid.

Do search for NCNS and read over some the things that take place.

I might reschedule, it would hinge on her next message, and the feel I got from it.

The hotel lobby was full of police because some VIP was staying there.

Now, in truth, they probably didn't care one way or the other if she was working out of there, but it made her feel jittery so who needs that?

We made another date the next day at another hotel and everything was fine.

Or maybe she got a better offer from a long-time client.  

So what if LE was in the area?  Unless she suspected you were LE, it wouldn't matter if 100 cops held hands in a ring around her house; they wouldn't know what was going on inside the house.
What --  they're gonna invest thousands of dollars on high tech eavesdropping devices to catch one hobbyist and one provider.
