I think you should just say "Thankyou, I had a good time too."  What you are doing is saying it's ok to meet again.

thank you for seeing me and to let you know I had a good time and I would like to see you again.  These thank yous are not graphic nor are they sent to every lady I have seen.  

All that I would want in a reply from you is a short note saying "I had a good time too", even if it might be a stretch.  You could also include whether you would be willing to provide a reference or a whitelist referal.

...first.  Whether I have visited with a gentleman for the first time, or the fiftieth, he needs to know that I appreciate him choosing me.  I keep it short, and on point.

  Just a qucik note to say thank you for choosing to visit with me.  There are hundreds of ladies in my area, and it was nice to know that you chose to visit with me.  While I enjoyed our time together, and would love to see you again, please know that  if you wish to visit with another lady, you may list me as a reference.

  If it is a gentleman I have seen before, he probably brought me flowers, wine, etc.  for our date and I will never take that for granted.  All additional gfts are appreciated, but never expected.

I always send thank you emails to the ladies I see, after the date. Sometimes I get no response which is kind of disappointing. Sometimes I get a really nice long response. Sometimes I get a simple response, saying something like, "Thank you. It was nice meeting you as well" or something similar. It is nice to be acknowledged and even if I get a simple "you're welcome," I am happy. On very few occasions, I have actually received a thank you from the lady, before I even had a chance to send one out, and that is always an extra nice thing.

I never give the kind of detail in a thank you note that you are talking about in your op. I think in your case, you should just say something like "You're welcome."

Sometimes guys send these because they are conditioned that it is rude to be intimate with a lady and not thank her the next day. They are just trying to be polite.

Sometimes they were so blown away with you that they are "smitten" to some degree (you know what I'm referring to here) and they are still thinking about you and are hoping you are doing the same.

So, never "lead a guy on" to think anything that isn't actually true. Just respond naturally. Was he clean, polite and paid? Then let him know you enjoyed your time with him and look forward to seeing him again and leave it at that.

But if there was some extra feeling of connection or passion that you want to acknowledge that you know might likely stroke his ego, don't feel it is "unprofessional" to let him know. I mean, what "profession" are we talking about when we are talking about being "unprofessional"? You are a paid companion... you can't be cold and stodgy if you spend a week in Aruba as his companion. Just be yourself and respond accordingly! Most guys will be more likely to see you again if they did think you felt a "connection" with them as well (if you really did) and it may even lead to longer dates,  overnights or travel opportunities with them in the future.
