Not a red flag as long as she is established and reputable as you state.. Sometimes for the assistants and providers, this business model is more cost effective specially if the lady is low volume so the assistant can reassure herself a more steady income if she works for more than one girl. If you want to reassure yourself more just in case, you can email reviewers who have seen this providers in the past to let you know if the experience was pleasant with the assistant...although typically is found on the general details of the review...

I recently decided to avoid the BP girls and step up to the "big leagues" of sort and see a well-reviewed (50+), somewhat-expensive lady.  I went thru her screening and was approved several weeks ago.  Yesterday I made a date with her for later in the week.  In conversing thru email, I was always answered by "her assistant" (I just thought this was the lady trying to maintain plausibility.)  However, once everything was set up, I was given two numbers, both with out of state area codes, to call the morning of our date.  When I Googled the numbers, it appears several other well-reviewed providers use these same contact numbers.  Are there any red flags here or do girls really use assistants?

...out of state area codes are common now a days too since your cell phone goes everywhere you do.

And some even use the same one.  Out of state numbers are not necessarily a red flag.  If someone moves to a different state, they often keep the old number to avoid having to inform everyone of their new number.  What puzzles me is, why would they give you 2 numbers to call the morning of your date?

name of the hotel over the phone and the provider was to give the room number via text.  Whatever floats her boat.

while the provider has a different number.   BTW, I see a lot of gals using area codes NOT from the area they work in...  means nothing today but at one time it might have distracted LE attention away.
