Keep the lady's information updated--who is working, who is taking some time off, who is visiting what cities, etc.

Everything that keystonekid said. You may want to include if they speak any other languages, personally I'm a sucker for a lady that can speak Italian with me. Also try to include rates on your site, as discussing rates over the phone is uncomfortable for both parties. An agency site that clearly states that rates are for time and companionship only also makes me feel that they are more trustworthy.
