Hi just got a VIP membership here and interested in exploring the hobbying thing for a couple of weeks while on a trip.

Not sure where to start. I searched for providers in the area and have a couple to contact.

Is it safe to call from my real number to setup the meeting? What precautions do you use while communicating? Any tips on etiquette. And where do I start with verification?

It depends who you are calling, however the correct answer is that you need to get a hobby phone or use a separate google voice number.  To remain anonymous you should not be calling from your real number.

Do not discuss money and services while communicating with the provider.

Be polite.  Treat the provider better than the way you would expect to be treated.

If you have not seen a provider before you are going to need to get on a verification site such as P411, Date Check, etc.  If this is your first time you may be asked by the provider to provide personal and/or work information.  Whether or not you choose to do that would be up to you and your comfort level.

That way, you only have to give your information to one person to be able to see some providers. Not all ladies will accept just that, but some will and it will indicate that on their profiles. As far as etiquette, don't ask any explicit questions, see providers with reviews, and drop the envelope before the action starts or you might get a blank stare.  

Also, don't write a novel in your first email. Just be on point about date, time, incall or out, and type of date (gfe or pse), and how long. Too many guys tell me their age, weight, race, accomplishments, send a photo, and don't include a damn thing that lets me know when, where, or how he wants to meet.

LR gave you some good advise, the only other thing i would add is start about 2 weeks before you go on your vacation, give the ladies some time to verify the info you give them.....

If you are single, with no Sig Other, using your personal phone should not be a problem, it's what I do.  However, with no references, you should strongly consider London's advice and join a verification site.  Gina, the owner of P411, is good at verifying guys with no references.\\
