Some will give you their info to book travel for them, but usually only after you have known her for a while and have had several dates and a level of trust. Most ladies will just ask you for a deposit (by moneypak or some other anonymous form) and book their own travel, thus remaining anonymous.
Rarely will any of them pay for all their own expenses up front and wait for reimbursement.

If you are considering paying for a ladys travel, you will have to work it out with the speicfic lady. There is not a one size fits all answer.

when it comes to hobbying.  Ask her and she'll tell you how to proceed.

I request a deposit for travel. You can always let her know your flight number and make arrangements to arrive in the destination airport around the same time. I have done it many, many times. I always required deposits for overnight and longer engagements, and never had a problem with booking flights that matched my companion's. I have had some issues with delayed flights and one cancelled flight (I hate JFK in the winter!!), but generally speaking we always end up at the right place at the right time.

Only a very very few of my friends are privy to my real name and information. And in all cases I have known them literally for years.

Its really not that big of a deal.

He knows you and you know him.

For the hourly client, not so much.  
But if I am comfortable and confident to travel across state lines or abroad with a client then I'm perfectly okay with him knowing my legal name.
When I've agreed to that sort of appointment I am familiar with him or very confident in my screening (and I've done both- traveled with years long clients and brand new clients).

Just my thoughts.

OTOH, I have also never just hopped on a plane to meet some new guy without knowing him, prior to that. I would imagine for extended days, and weeks especially outside of the U.S. you would need to have a rapport, and trust already established. If not, would never do it. For medical reasons (in case something happens to either of you), real names are disclosed now and again. It is not a must, though in every case. My sugar daddy knows my full name, where I live, and just about every other detail about my life, but my clients only know my first name.
